Growing up meatloaf was not one of my favorite meals. In fact, when the two older boys were younger I almost never made it. However, I did make stuffed meatballs with a secret sauce. One night I got a little lazy and made one big stuffed “meatball” and if became Ninja Foodi Stuffed Meatloaf.
This is a very easy recipe with just a handful of ingredients and a savory topping. I think the sauce makes it unique. It is an almost even mixture of ketchup and Worcestershire sauce gives it a nice glaze and tangy taste.
Ingredients for Ninja Foodi Stuffed Meatloaf
- 1 cup oats
- 1 teaspoon onion powder
- 1 tablespoon garlic salt, divided
- 1 teaspoon black pepper
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 2 pound ground meat
- 1/2 cup milk
- 1/4 cup soy sauce
- 2 eggs
- 1 cup of cheese of your choice
- 1/2 cup Worcestershire sauce
- 1/2 cup ketchup
- 1 cup water
Directions to Make Ninja Foodi Stuffed Meatloaf
Mix the Worcestershire sauce and ketchup and set aside. If you want it a little less tangy add a little more ketchup. Play with the ratio of each ingredient to get the flavor your family will like.
Add the 1/2 tablespoon of the garlic powder to the remaining dry ingredients. In a large bowl combine the meat, eggs, milk, sauce sauce and dried ingredients. It is important to mix this well without over mixing. The meatloaf will be gummy if you knead for too long.
Using a Ninja Foodi Cake Pan place a little over half the meat mixture in the bottom of the pan. In order to keep the cheese from leaking, make a lip around the edge as you want to place the cheeses in the depression in the middle. Add the cheese into the depression but do not overfill. The cheese will melt and spread. I used mozzarella in my example, but will use cheddar or American or any cheese I have at the time.
Once the cheese is added use the remaining meat to over the cheese. Have the edges meet the lip made in the previous step and pinch to seal.
Sprinkle the remaining 1/2 tablespoon of garlic salt across the top of the meatloaf. Do not to with the ketchup mixture yet.
Cooking Instructions
Add 1 cup water to the Ninja Foodi. Place the plan on a trivet or sling and lower into the Ninja Foodi. Place the pressure seal lid on close be sure it is sealed. Set to High Pressure for 30 minutes. Once it is done let the pressure naturally release for 10 minutes. Then release the remaining pressure. Drain the grease from the pan. Spread the ketchup and Worcestershire sauce over the top. This is where the uniqueness of the Ninja Foodi comes into play. Place the pan back in the Ninja Foodi and close the broiler lid. Broil for 5 minutes until the topping is a nice glaze.
Carefully remove the meatloaf using the sling or trivet. Serve with a nice green salad or mashed potatoes. You can make the potatoes as pot-in-pot and everything will be done at once. See the recipe Ninja Foodi Parmesan Chicken with Bacon for more information on pot-in-pot cooking.
