Summer is finally here and while I love comfort foods, I also love the freshness of the foods in spring and summer seasons. We can’t wait to plant our garden, nurture it and watch the miracle of growing our own food. I have done this for years with all my kids, and I know as a family we certainly enjoy the crunch of a cucumber straight from the garden, or the juiciness of a tomato or melon right off the vine more then what we buy at the store the rest of the year. That said one of my favorite summer recipes for any night, but certainly for picnics, parties or pot lucks, is the Cucumber, Strawberry, Melon Salad.
I found this recipe a few years ago when I had surplus of cucumbers form the garden and could not pickle any more or give more away. I will apologize for not giving credit where credits this due, but do not recall where I found the recipe originally, but certainly cannot claim as an original creation. However, it is so good, I want to share the wonderfulness of this Strawberry, Cucumber and Melon Salad.
This is so simple to make and you can mix the dressing and set aside. (The Pampered Chef Prep Bowl with Lid is great for storing and transporting the dressing.) I do not dress the salad until right before I serve it to keep the fruits and veggies nice and fresh. This recipe is easily scalable if you need to make for a larger crowd or decrease for a quick nighttime dinner. Leftovers are good for a few days as well.
What You Need
16 ounces of strawberries, cleaned, hulled and halved.
1 cucumber, halved lengthwise and cut into 1/4-inch slices
1 cup of honey dew cut in one inch pieces
3 Tablespoons of honey
1 Lime to provide the below:
2 Tablespoons of lime juice
1 teaspoon of lime zest
Play with the amounts of the strawberries, cucumber and melon based on your families likings or just your tastes for the day. I typically find one lime at room temperature gives me enough juice and zest.
Summer Strawberry, Cucumber and Melon Salad Instructions
Mix the strawberries, honey dew and cucumber together in a bowl. Mix the honey, lime juice and lime zest together to create the dressing. When ready to server, make sure dressing is mixed well and toss the salad in it.
Summer Strawberry, Cucumber and Melon Salad
Ingredients
- 1 ea Cucumber, halved lengthwise and cut into ¼ inch slices
- 1 Cup Honeydew melon cut into one inch pieces
- 16 Ounces Strawberries, cleaned, yelled and halved
- 3 Tbsp Honey
- 1 Ea Lime
Instructions
- Gently mix the strawberries, cucumber and melon together in a large bowl.
- Zest the lime and mix with honey and about 2 tablespoons of fresh squeezed lime juice in a separate small bowl as dressing.
- When ready to serve give the dressing a quick mix and dump over strawberries, cucumbers and melon. Mix gently to cover.
