2lbsPork tenderloinI purchase from my butcher as two 1 lb tenderloins.
½LbBacon
1tspSaltMore or less to taste.
1tspPepperMore or less to taste.
1cupWater
Instructions
Season the Pork tenderloin with salt and pepper to taste.
Wrap tenderloin In bacon. Make sure all bacon ends meet on the same side creating a seam you can lat the pork on.
If making potatoes or rice at the same time Either us pot-in-pot method or cover with aluminum foil to capture the pork drippings.
Place the cup of water in the Ninja Foodi. Lay the pork tenderloins in a circular pattern on the rack and placed in the Ninja Foodi. If not making potatoes or rice, then place the rack in the low setting, this will prevent having to flip the rack in a future step.
Set the Ninja Foodi to Pressure and High for 4 minutes. You will be Air Crisping as well, so do not want to overcook. If you prefer your pork more rare cook for 2-3 minutes.
Once complete release the pressure. Pull out the potatoes or rice if in the pot. Flip the rack To the low position if needed and place the pork tenderloin back in the Ninja Foodi.
Set the Ninja Foodi to Air Crisp on High for 10 minutes. Depending on how crispy you want the bacon, and how fatty it is you may need to cook longer.
Notes
I sometimes use peppered bacon and then do not preseason the pork.
